Quick and Easy Homemade Lemon Dijon Dressing


 

This dressing uses staples that are almost always found around my house and takes less than 5 minutes to make! Using heart-healthy extra virgin olive oil, lemon juice, dijon mustard and some spices, this dressing is about as simple as it gets and adds a ton of flavor to your salads. It can also be used as a marinade for chicken or a dressing for pasta salad!



Ingredients (yields ~1/2 C total, or ~8 servings):

1/4 C plus 2 Tbsp extra virgin olive oil

2 Tbsp red wine vinegar

Juice from 1/2 lemon (about 1 Tbsp lemon juice)

1 tsp dijon mustard

1/4 tsp garlic powder

1/4 tsp salt

1/4 tsp ground black pepper


Directions:

1. Add oil to medium-sized bowl.

2. Add the red wine vinegar, lemon juice, mustard and spices (garlic powder, salt, pepper). Whisk all ingredients together and serve!


*Tip: This stays well for a few days in the fridge in an airtight container, although the olive oil will likely thicken and the ingredients may separate. Just mix it together with a spoon to combine all ingredients prior to serving.
