Mediterranean Style Skillet Chicken


 

I developed this recipe on a whim, but I think it may become a new staple in our house! You know those recipes that just come together when you are staring at the fridge, thinking "what the heck am I going to make for dinner tonight?" That was how this chicken dish was born, but I will now make sure that I have these ingredients on hand. It is so easy to whip up and it's packed with flavor!Not to mention, it comes together in less than 25 minutes, making it perfect for busy week nights, and it uses common ingredients that many people have in their kitchen.


Ingredients (serves 4):

24 oz boneless chicken breast (about 1 1/2 pounds), raw

1/3 C olive oil

Juice from 1 lemon

1/4 C scallions, chopped

1/2 tsp garlic powder

1/2 tsp onion powder

1 1/2 tsp smoked paprika

1 tsp oregano

1/2 tsp dill (dried or fresh)

1/2 tsp parsley (dried or fresh)

1/4 tsp salt

1/8 tsp ground black pepper


Directions:

  1. Cut raw chicken breast into cubes.

  2. Warm oil in a large pan over medium heat.

  3. Add chicken to pan with the oil. Add all spices (garlic powder, onion powder, smoked paprika, oregano, dill, parsley, salt, pepper), toss chicken in pan to coat with oil and spices and cook chicken over medium heat for approximately 8-10 minutes, until the side facing up begins to turn white and opaque.

  4. Use tongs to flip the chicken cubes so the chicken cooks evenly on both sides. Add lemon juice and scallions and continue cooking for an additional 8-10 minutes, until chicken is cooked, reaching an internal temperature of 165 degrees Fahrenheit. Enjoy! This chicken is delicious on its own, or it's great addition to a grain bowl, salad or wrap - I made a Mediterranean style grain bowl with farro, sweet potato, spinach, roasted zucchini and feta drizzled with tahini, below!
