Lemon Tahini Dressing
This dressing tastes like summer and it is the perfect addition to any salad or bowl. It also packs a ton of low FODMAP flavor for those following the low FODMAP diet and it is free from gluten, dairy and eggs, meeting multiple dietary needs. Tahini (which is a paste made from sesame seeds) is low FODMAP in a 1 Tablespoon serving and provides magnesium, calcium and iron. Additionally, sesame seeds are a good source of mono- and polyunsaturated fatty acids, which is one reason they are thought to be beneficial for cardiovascular health.

Ingredients (yields 1/4 C or 4 servings)
2 Tbsp tahini (the only ingredient should be sesame seeds)
2 Tbsp olive oil oil
1 Tbsp lemon juice (this is approximately the amount of juice from 1/2 lemon)
1/4 tsp oregano
dash salt and pepper to taste
Directions:
1. Mix all ingredients in a small bowl. How easy is that?!
*This will stay in the fridge in a sealed container for a few days, but you will need to mix it and let it sit at room temperature for a few minutes, since the olive oil will solidify in the fridge.
