Beat the Heat With These 3 Ingredient Popsicles


 

Watermelon-Strawberry Popsicles


When it's hot outside, I don't always feel like turning on my oven. However, that doesn't mean I don't want something sweet - and these popsicles do the trick, no baking required! With 3 simple ingredients (really 2, if you don't count ice), these popsicles are just sweet enough and they contain no added sugar. They also happen to be dairy free, gluten free and vegan, so they're a great snack to serve if you're entertaining and need to be mindful of many dietary restrictions (or if you needed something for yourself)! Also, freezing fruit is a great way to take advantage of fruit in season and make it last, or prevent an over zealous grocery haul from going bad before you can eat it all! Never fear buying the whole watermelon again - I've got you covered!



Ingredients (serves 4):

3 C watermelon, cut into 1-2 inch cubes

4 large strawberries

1 C ice, cubed


Directions:

1. Place ice in blender

2. Add watermelon to blender and puree until smooth, approximately 20-30 seconds.

3. Pour contents of blender into 4 popsicle molds until they are filled halfway. Slice strawberries and place one strawberry (sliced) into each popsicle mold. Fill the remainder of the mold with the rest of the blender contents.

4. Cover each popsicle mold with the provided top/stick and place in freezer. Allow popsicles to chill for at least 4 hours before serving. Enjoy!

*Note: If you do not have popsicle molds, you can also use a paper cup and a popsicle stick! Depending on the size of the popsicle mold used, there may be a small amount of mix leftover. If so, either make additional pops or enjoy the slushie!
